In the past, harvest was the biggest and most anticipated event of the year, along with pig slaughter and church holidays. The grape harvest began after October 15, following the name day of Teresa (St. Teresa of Ávila). The grapes were pressed in a wooden press and then the grape juice was poured into a wooden barrel.
